Recipe - Acai Cherry Gelato

This soothing gelato is right up there with my favorites of all time, with its melt-in-your-mouth creaminess, and mega cool fruity flavor. Make sure that the dates used are very soft – if they are more fibrous, soak them for about 30 minutes in water to tenderize them. All-natural (and no sugar added) cherry concentrate can be found in health food stores - if you have trouble finding it or want to keep this recipe raw, just use regular fresh cherry juice . . . doubling the amount of juice, and adding in a couple extra dates.

Ingredients

Add To Cart 2 Tbsp. Navitas Naturals Cashews, soaked
Add To Cart 2 Tbsp. Navitas Naturals Coconut Oil
Add To Cart 2 Tbsp. Navitas Naturals Acai Powder
Add To Cart 2 Tbsp. Navitas Naturals Yacon Syrup, or 1 1/2 Tbsp agave nectar
4 Tbsp. cherry juice concentrate
3 – 4 large medjool dates
  ¼ tsp vanilla extract, or ½ seeded vanilla bean
  2 cups frozen black cherries, plus more for garnish

Directions

Soak the cashews in water for 6 hours or overnight until extremely soft.

In a strong blender or food processor, blend all ingredients EXCEPT the frozen cherries until completely smooth. Add in the cherries, and pulse until fruit is coarsely chopped, but not fully blended.

Transfer mixture to a bowl and freeze for 4 hours or longer. Top with fresh or thawed frozen cherries before serving.
