Recipe - Mulberry Balls

Naturally sweetened by mulberries alone, these easy treats are an exquisite mixture of sweet, citrus and a touch of spice.

For the filling:

Add To Cart 2 cups Navitas Naturals Mulberries, + ½ cup mulberries reserved
Add To Cart 1 cup Navitas Naturals Cashews, + 1/3 cup cashews reserved
  1 Tbsp Navitas Naturals Coconut Oil
  1 tsp vanilla extract, or ½ vanilla bean
  ¼ tsp allspice powder
  2 tsp orange zest (grated orange rind)
  pinch sea salt
  1/3 cup dried (unsweetened) coconut flakes, or shredded coconut

Directions

Soak: Cover 1 cup of the cashews with water, and let soak for about an hour. Drain and discard the water.

Combine: In food processor, combine 2 cups of mulberries, soaked cashews, coconut oil, vanilla, allspice, orange zest and sea salt. Process until well incorporated and as smooth as possible. Transfer to a medium bowl.

Add: Mix in remaining ½ cup whole mulberries and dried coconut, and knead to incorporate well. Dough should be sticky enough to hold together when pressed – if too try add a touch of water, a tablespoon at a time. Roll and squeeze into balls.

Chop: Place the remaining cashews in the food processer, and process until nuts are finely chopped. Pour onto a large plate.

Roll: Roll mulberry balls in coarse cashew powder. Will keep for about 1 week, refrigerated.

Makes about 18 – 20 balls.
