
This recipe warms up the whole house with the alluring scent of freshly baked banana bread, resulting in an ultra moist and sweet treat. Secret ingredients -- including sprouted chia and flax -- add extra fiber and EFAs that every body can appreciate.

| 1/3 cup water | |
| 1½ cups whole wheat pastry flour* | |
| 1 Tbsp baking powder | |
| 1 tsp baking soda | |
| 1 tsp salt | |
| 2 Tbsp maple syrup | |
| 1¼ cup mashed very ripe banana (3-4 bananas) | |
| ½ cup chopped walnuts (optional) | |
| *For Gluten-Free version use brown rice flour and buckwheat flour in place of whole wheat. |
Preheat oven to 350 degrees.
Mix flax powder with water in a small cup. Set aside for 5 minutes.
In a medium-sized bowl, mix together flour, Navitas Naturals Omega Twister Blend, baking powder, baking soda and salt.
In a separate medium-sized bowl, blend coconut oil, palm sugar, flax mixture and maple syrup. Mix in the dry ingredients with the wet ingredients until combined. Fold in the mashed banana, and walnuts if desired.
Transfer mixture to a greased 9” x 5” x 3” loaf pan. Bake for 45 – 50 minutes, or until a toothpick comes out clean when inserted into a bread. Allow to cool slightly before serving.
Makes one loaf.
