
This salsa is best when it’s had a chance to sit for a while, allowing the flavors to combine. Plus, the longer you wait, the plumper the goji berries will become (it’s a good thing!) Enjoy with chips, crackers, on top of Mexican themed dishes, etc.

1/2 cup Navitas Naturals Goji Berries |
| 1 cup tomatoes, chopped | |
| 1 clove garlic, minced | |
| ½ medium shallot, minced | |
| ½ jalepeno pepper, deseeded and minced (use more for additional heat) | |
| 1 lime, juiced |
Toss all ingredients together in a medium bowl. Refrigerate for a minimum of 30 minutes before serving.
