| ¼ tsp vanilla bean powder | |
| pinch sea salt | |
| 1 cup packed medjool dates, pits removed (about 8 large) | |
| ¼ cup finely chopped dark chocolate (or mini chocolate chips) |
Run cashews through a food processor until a course flour has formed. Add the twister powder, cacao powder, vanilla powder and sea salt and blend together. With the machine running, add the dates, one at a time, until a crumbly dough has formed. Stop the machine, add the goji’s and the dark chocolate, and pulse a couple times until just folded in.
Remove from the processor and use a melon baller or a teaspoon to form into small dough balls. Refrigerate until ready to serve. Makes 2-3 dozen small “bites.”
