
Fresh and easy, this soup brings to light all the flavors of a happy summer garden.

2 Tbsp. Navitas Naturals Goji Powder |
| 3 cups chopped tomatoes | |
| 2 cups plus ¾ cup fresh corn kernels | |
| ½ packed cup fresh basil | |
| 1/3 cup hemp or other EFA-rich oil | |
| 2 Tbsp minced shallots (about 1 or 2 shallots) | |
| ½ cup water | |
| ½ tsp sea salt |
Blend all ingredients except for ¾ cup of the corn kernels until fairly smooth. Mix in remaining corn. Ideally, let flavors develop for a minimum of 30 minutes in the refrigerator before serving.
