Recipe - Tomato Corn Gazpacho

Fresh and easy, this soup brings to light all the flavors of a happy summer garden.

Ingredients:

Add To Cart 2 Tbsp. Navitas Naturals Goji Powder
  3 cups chopped tomatoes
  2 cups plus ¾ cup fresh corn kernels
  ½ packed cup fresh basil
  1/3 cup hemp or other EFA-rich oil
  2 Tbsp minced shallots (about 1 or 2 shallots)
  ½ cup water
  ½ tsp sea salt

Directions

Blend all ingredients except for ¾ cup of the corn kernels until fairly smooth. Mix in remaining corn. Ideally, let flavors develop for a minimum of 30 minutes in the refrigerator before serving.
