
Agar agar is a tasteless seaweed found in health food stores and Asian markets that acts as a wonderful natural (vegetarian) gelling agent similar to gelatin. If a raw recipe is desired, 2 Tbsp of chia seeds could be added in the place of the agar, leave out the cooking, and simply allow the recipe to stand for about an hour before serving.

1/4 cup Navitas Naturals Goji Berries |
| ½ cup orange juice | |
| 1 tsp agar agar powder | |
| 1½ Tbsp lemon juice |
In a small bowl or cup, mix all the ingredients together except for the whole goji berries. Pour into a saucepan and gently bring to a boil, simmering for about one minute. Transfer the mixture back into the bowl and stir in the goji berries. (If a smoother jam is desired, blend the mixture in a blender for a moment to break the berries into large chunks, or simply leave as whole berries). Place mixture in the refrigerator for a minimum of an hour - allowing the agar to set and the goji berries to plump up. Will keep in a sealed jar for about 2 weeks.
