| 2 cups flour | |
| 2 cups oats (soak in water or milk) | |
| 1 cup soy milk or water | |
| 3/4 cup navitas naturals yacon powder | |
| 3/4 teaspoon baking soda | |
| 1/2 teaspoon sea salt | |
| 1 egg (optional) | |
| 1 tsp Nutmeg (optional) | |
| 1 tsp cinnamon (optional) |
Preheat oven to 350°. Mix the dry ingredients into a bowl and the wet into another, then stir the wet into the dry. Grease a cookie sheet with olive oil. Scoop dollops of the batter onto sheet and press them flat. Bake for 10-12 mins.
