
You can also try rolling in some crystallized ginger for an extra gingery punch.

1/4 cup Navitas Naturals Hemp Seeds |
| 1/2 cup sesame seeds | |
| 1 cup unsweetened coconut | |
| 2/3 cup pitted medjool dates (about 8) | |
| 1 heaping tsp ginger powder (more if desired) | |
| pinch sea salt |
Combine all ingredients in a food processor and mix into a dough. Add additional dates or hemp seeds if needed – dough should stick together and be stiff.
Sandwich the dough between 2 pieces of wax paper on top of a cutting board or table. Roll out into a flat sheet to desired thickness, and cut (or use small cookie cutter shapes!) to form into soft little cookie bites. Makes about 12-20 cookies, depending on the size of the cookie.
