Peach and Goji Berry Muffins

1 2/3 C. Flour
1/3 C. Navitas Naturals Mesquite powder
1/4 tsp. Baking soda
1 1/2 tsp Cinnamon
1/2 tsp Nutmeg
3/4 tsp Sea salt
3/4 C. Vanilla soy milk
1/4 C. Navitas Naturals Yacon syrup
1/4 C. Navitas Naturals Yacon powder
1/4 C. Olive oil
1/4 C. Peach kefir
1 1/2 C. Navitas Naturals Yacon slices, torn up into smaller pieces
1/2 C. Navitas Naturals Goji berries

Preheat oven to 350°. Mix dry and wet ingredients separately, and then stir the wet into the dry. Spoon the batter into an olive-oil greased muffin tin. Makes 6 large or 12 small muffins.
