Recipe - Lucuma Macaroons

Ingredients:

These treats are so delicious, and if you can resist eating them all, they actually make a very beautiful gift – put in nice box and you’re all set!

Add To Cart 2 Tbsp. Navitas Naturals Lucuma Powder
1 cup pitted dates
¼ cup cashew butter
1 tsp vanilla extract
½ cup unsweetened coconut flakes, plus additional ¼ cup for rolling
pinch sea salt

Directions

Soak the dates for 10 minutes in water to soften. Drain liquid, and place in a food processor to blend into a sticky puree. Add the remaining ingredients, reserving ¼ cup coconut flakes to the side, and process until a dough has formed – dough should stick together when rolled into a small ball. If dough is too sticky, add more coconut flakes; if too dry, add a touch of water, 1 tsp at a time.

Place the reserved coconut on a plate. Roll the dough into 1” balls, then roll in the coconut and flatten with the bottom of a glass, or the palm of your hand. Refrigerate until ready to enjoy. Makes about 2 dozen, and will last for 1 week.
