
This is a terrific dessert recipe to take as a dish to pass around parties and family gatherings. And it's one of those great raw food recipes that you can make in advance and store in your freezer. Even if the holidays seem a long ways off, you can get a head start! Everyone who makes these (and eats these) LOVES these.
| 1 1⁄2 cups raw pecans | |
| 1⁄2 cup unsweetenend, shredded and dried coconut | |

1 Tbsp (or more!) Navitas Naturals Lucuma Powder |
| pinch himalayan crystal salt | |
| 1⁄2 tsp. ginger powder | |
| 1⁄2 tsp. cinnamon | |
| 1⁄4 tsp. nutmeg | |
| 1⁄2 tsp. vanilla extract | |
| 1⁄2 cup raisins | |
| 10 soft dates, pitted |
Process all of the ingredients, except for the raisins and dates, in a food processor, fitted with the "S" blade, until coarsely ground. Add the raisins and dates and continue processing until the mixture begins to stick together when pressed between your fingers. Using about 2 tablespoons worth of dough per cookie, roll and form them into desired shapes.
