| 1 bunch kale, de-stemmed, and torn into pieces | |
| 2 Tbsp Nama Shoyu (organic soy sauce) | |
| ½ tsp ginger powder | |
| 1 Tbsp minced shallot | |
| 1 tsp pressed garlic | |
| 1 Tbsp rice or apple cider vinegar | |
| 2 tsp sesame oil | |
| ¼ cup raw sesame seeds | |
| ½ cup raw sunflower seeds | |
| ¾ cup chopped raw walnuts |
Crumble the nori sheets and toss with the kale inside of a large bowl. Add in all the remaining ingredients, and use clean hands to massage together for 1-2 minutes.
Spread out the mixture evenly atop of 4 mesh dehydrator sheets. Dehydrate at desired temperature for 6-12 hours until kale is crispy and dried through. Store in an airtight container when not in use to avoid kale becoming soft. Will keep for about 1-2 weeks; makes 6-8 servings.
