
Hearty meets healthy in this veggie-rich savory meal. Beneficial tempeh makes a superior high-protein and no-cholesterol stand-in for ground beef.

2 Tbsp Navitas Naturals Coconut Oil, melted |
| 1 8oz package of Grain or Soy Tempeh | |
| 1 medium yellow onion, diced | |
| 1 red bell pepper, diced | |
| 2 Anaheim chiles, minced | |
| 2 stalks celery, diced | |
| 2 cloves garlic, minced | |
| 2 large Roma tomatoes, diced | |
| 4 Tbsp tomato paste | |
| 3 Tbsp Braggs Liquid Aminos, or soy sauce | |
| 1 Tbsp apple cider vinegar | |
| 1¼ tsp ground cumin | |
| 1/8 tsp cayenne | |
| ½ tsp ground black pepper |
Crumble the tempeh into bits, resembling cooked ground beef.
Heat the coconut oil in a large pan over medium heat, and add the tempeh. Cook tempeh until slightly golden, about 5 minutes, stirring frequently to prevent sticking.
Add the onion, garlic, bell pepper, Anaheim pepper and celery. Cook another 5 minutes, stirring occasionally. Add tomatoes and tomato paste, and cook until tomatoes have wilted, about 3 minutes.
Reduce the heat to medium-low and Incorporate in the remaining ingredients. Simmer for 15 minutes, stirring occasionally, until thoroughly reduced.
Serve on top of hamburger buns, rolls, or sprouted grain bread.
